And this ... well ... this is the tangy, sweet/sour, tamarind-y, in a nutshell - uniquely piquant - gravy that is poured over your bowl of noodles, after you pile on your condiments of diced chives and soya puffs, hard-boiled egg slices and prawns. A dollop of chilli sambal if you like yours a little spicier, and a dash of lime .... and walla .... !!
